Another Thai Dish - Tofu with Peanuts
If you have never eaten or cooked with Tofu I recommend it. It is nutritious and filling leaving you very satisfied after you've eaten it.
I've always preferred Thai dishes without peanuts. This one, however, was better with the peanuts. I'm glad I tried it. It was super fast and easy and I will certainly do this again!

1 pkg firm tofu cut into 1 inch pieces
1 cup broth
1 tbs garlic chile sauce
1 tbs chile oil
1/3 tsp salt
1/2 cup matchstick carrots
1 tbs grated fresh ginger
1/2 cup chopped green onion
1/4 cup unsalted roasted peanuts, chopped
Whisk broth and garlic chile sauce in medium bowl. Add tofu to bowl and allow to marinate at least one hour.
Preheat boiler and cook rice according to pkg instructions. Arrange tofu in single later on foil lined pan coated with cooking spray. Broil for 14 minutes or until golden. (I browned both sides of the tofu.)
Heat oil in large nonstick skillet over med-high heat. Add carrots, ginger and salt and cook for about a minute. Add broth mixture and cook for about a minute. Remove from heat, stir in tofu and onions.
Serve over rice and sprinkle peanuts on top. Yum!
