Grilled Sandwich with Easy Special Sauce

If you pay an average $6 for a loaf of bread, you will use your bread wisely. This is one of my favorite sandwiches. Of course, it is grilled:

Have you ever mixed ketchup, mayo (vegenaise) and mustard and tasted it?

If spread onto a sandwich it tastes totally different than it would if you simply squirted all three onto the thing separately.

This special sauce is easy b/c you are basically mixing the condiments you may normally use while making a grilled sandwich rather than adding them individually.

Here is what you need to serve 2:
2 slices of cheese (colby jack, muenster or montery jack are great)
4 slices of bread
3 thin slices of smoked turkey
3 thin slices of smoked ham
1/4 cup spinach or lettuce
1 heaping tbs creole mustard
1 heaping tbs vegenaise (or mayo for you normal people)
1 heaping tbs thinly diced onion (green or sweet onion)
1 tsp dried thyme
1 tbs butter

Combine mustard, vegenaise, onion and thyme in bowl.

Place cheese on two pieces of bread and sauce mixture on other two pieces.

Next place turkey and ham on top of cheese and spinach on top of sauce.

Carefully combine the bread with the meat slice with the bread with the sauce slice to form a sandwich.

Place 1/4 tbs butter in hot saucepan on stove. Once butter melts place sandwich, cheese side down in pan. Cover and allow to cook for about 3 minutes on medium heat. Flip and cook other side for 3 minutes or until golden brown on both sides.
