Chicken Broccoli and Cheese Soup


I had a cooked de-boned chicken and homemade chicken broth in my fridge and wanted a hearty soup to make with it. This is what I made and it made the husband VERY happy. I'm so glad to have this in the fridge ready to eat for lunch this week!

3 tbs butter
2 celery stalks
1 yellow onion
2 carrots
1 tsp salt
1 steamed head of broccoli
6 cups chicken broth
3 cups milk
1 cup cream
chicken cut into small bite size pieces
grated cheddar cheese

Melt butter in large soup pan on low. Process vegetables until diced well, add to pan and salt and saute until onions are clear. Add chicken broth, milk and cream and turn heat up to bring to a boil then allow to cook on low for an hour. Add broccoli and chicken to pan before serving. Sprinkle cheese on top of each bowl when serving.
Yum! This is a comfort soup.

(Really good with tortilla chips broken on top!)
