Sweet Pea Potato Dill Salad


It's all in the name. Or, the names all that's in it. I made this for the first time with my mother in law. She pulled the recipe out and I was in heaven!

5 lb red potato
1 small package steamable frozen sweet peas
1 tsp dried dill
1/2 cup sour cream
1/2 cup veganaise (or mayo for you non-allergic people)

I quarter the potatoes, lightly drizzle with EVOO and salt and stick in broiler until they begin to brown (for about 30 minutes.)
While potatoes cook, steam peas.
Combine all ingredients and stir gently.

This is one of those recipes that is delish when served with LOTS of fresh pepper and salt. Use a course grind pepper and salt (like Kosher or Sea Salt).
