Pimento Cheese Spread
This is what I packed my hubby for lunch today.
Imagine this spread on a cracker, on a piece of bread or an apple slice. This is my take on a pimento cheese found at a local health food store. It is good.
8 oz shredded cheese (best is a combination of white and yellow cheddar)
8 oz softened cream cheese
1 jar marinated roasted red bell peppers
1 cup vegenaise (or mayo for you egg eaters)
Drain peppers and dice. Combine and fold all ingredients in large bowl. Serve.
